Lettuce & Egg Fried Rice

Ingredients: 2 servings

  • 2 eggs, beaten
  • 2 leaves iceberg lettuce, torn into bite-size pieces
  • 14 oz. cooked rice
  • 6 Tbsp. Kewpie Roasted Garlic Onion Dressing

Directions

  1. In a large frying pan, mix rice and 4 Tbsp. dressing. Turn on the heat to high, and cook until the rice gets fluffy.
  2. Put the rice on one side of the frying pan, then add the beaten egg to the other side. Stir eggs to make runny scrabble eggs. Mix rice and egg together, then add lettuce and the rest of the dressing (2 Tbsp). Stir lightly and serve immediately.
