Salad Chicken & Sweet Potato Salad

Ingredients: Serves 1 or 2 appetizer portions

  • 1/2 Satsuma-imo (Japanese sweet potato), cut into cubes
  • 1 c. broccoli florets
  • 4 oz. cooked chicken breast, cut into cubes
  • 3 Tbsp. Kewpie Deep-Roasted Sesame Dressing

Directions

  1. Place the cubed sweet potato on a microwave-safe dish and lightly cover it with plastic wrap. Cook in the microwave for 2 to 3 minutes until it’s cooked through. Remove from the microwave (caution: the dish will be extremely hot) and set aside.
  2. Place the broccoli on another microwave-safe dish and lightly cover it with plastic wrap. Cook in the microwave for 2 minutes. Remove from the microwave (caution: the dish will be extremely hot) and set aside.
  3. Assemble the potato, broccoli, and chicken on a serving plate. Drizzle with the dressing and serve immediately.
