Kewpie Reuben Sandwich
Ingredients: Serves 1
- ¼ lb. deli sliced corned beef
- ¼ c. sauerkraut
- 2 slices Swiss cheese
- 2 slices rye bread
- 1 Tbsp. KEWPIE Mayonnaise
For the Russian Dressing
- ½ c. KEWPIE Mayonnaise
- 2 Tbsp. ketchup
- ½ tsp. horseradish
- 2 Tbsp. onion, finely chopped
- 1 tsp. vinegar-based hot sauce
- ½ tsp. Worcestershire sauce
Directions
1. Prepare the Dressing:
- In a small bowl, combine all ingredients for the Russian dressing. Set aside.
2. Prepare the Sandwich:
- Heat the sauerkraut in a microwave for about 30 seconds. Drain excess liquid and set aside.
- Spread KEWPIE mayonnaise on the outer sides of both bread slices (the sides that will touch the pan).
- Place one slice of bread in the frying pan, mayonnaise side down. Spread 2 spoonfuls of Russian dressing over the inside of the bread.
- Layer in this order, one slice of cheese, half of the sauerkraut, half of the corned beef, remaining sauerkraut, remaining corned beef, second slice of Swiss cheese.
- Spread 2 spoonfuls of Russian dressing on the inside of the second bread slice. Top the sandwich with the second slice of bread, mayonnaise side up.
3. Cook the Sandwich:
- Heat the pan to medium-low. Cook until the bottom side is golden brown and the cheese begins to melt, about 3 to 4 minutes. Carefully flip the sandwich and cook the other side until golden brown and the cheese is fully melted, about 2 to 3 minutes more.
4. Serve:
- Remove from the pan and let rest for 1 minute. Cut in half diagonally and serve immediately.
