Recipe: Japanese Chicken & Waffles – with KEWPIE Yum Yum Sauce
Serves 4
Ingredients
KEWPIE Yum Yum Sauce
- 1/2 cup KEWPIE Mayonnaise
- 1 tbsp ketchup
- 1/2 tbsp rice vinegar
- 1 tsp sugar
- 1/2 tsp garlic powder
- 1/4 tsp paprika
- 1 to 2 tbsp water
Instructions
- Whisk everything except the water until smooth
- Add water a tablespoon at a time until it reaches drizzle consistency
- Refrigerate at least 1 hour before using
Ingredients
Smash-Style Chicken Thighs
- 4 boneless, skin-on chicken thighs
- Kosher salt
- Freshly ground black pepper
- 1/2 tsp garlic powder
- Neutral oil
Instructions
- Pat thighs very dry, and season both sides with salt, pepper, and garlic powder
- Heat a cast iron pan over medium-high with a thin film of oil
- Lay thighs skin-side down and immediately press hard with a spatula so the skin makes full contact – use a weight if you like
- Cook undisturbed 5–7 minutes until deeply crisp and golden, then flip and cook another 4 to 5 minutes until cooked through – you’re looking for them to be about 175 degrees
Rest 5 minutes, slice into strips and serve with the waffles and the KEWPIE Yum Yum Sauce

Green Onion Waffles
- Enough “just add water” waffle mix for 4 waffles
- 3/4 cup thinly sliced green onions
Instructions
- Preheat waffle iron
- Make mix according to package directions and fold in green onions
Cook until deeply golden and crisp, maybe even a little longer than you think you should – crisp is the point
