Recipe: Japanese Chicken & Waffles – with KEWPIE Yum Yum Sauce

Serves 4

Ingredients
KEWPIE Yum Yum Sauce

  • 1/2 cup KEWPIE Mayonnaise
  • 1 tbsp ketchup
  • 1/2 tbsp rice vinegar
  • 1 tsp sugar
  • 1/2 tsp garlic powder
  • 1/4 tsp paprika
  • 1 to 2 tbsp water

Instructions

  1. Whisk everything except the water until smooth
  2. Add water a tablespoon at a time until it reaches drizzle consistency
  3. Refrigerate at least 1 hour before using

Ingredients
Smash-Style Chicken Thighs

  • 4 boneless, skin-on chicken thighs
  • Kosher salt
  • Freshly ground black pepper
  • 1/2 tsp garlic powder
  • Neutral oil

Instructions

  1. Pat thighs very dry, and season both sides with salt, pepper, and garlic powder
  2. Heat a cast iron pan over medium-high with a thin film of oil
  3. Lay thighs skin-side down and immediately press hard with a spatula so the skin makes full contact – use a weight if you like
  4. Cook undisturbed 5–7 minutes until deeply crisp and golden, then flip and cook another 4 to 5 minutes until cooked through – you’re looking for them to be about 175 degrees
  5. Rest 5 minutes, slice into strips and serve with the waffles and the KEWPIE Yum Yum Sauce


Ingredients
Green Onion Waffles

  • Enough “just add water” waffle mix for 4 waffles
  • 3/4 cup thinly sliced green onions

Instructions

  1. Preheat waffle iron
  2. Make mix according to package directions and fold in green onions
  3. Cook until deeply golden and crisp, maybe even a little longer than you think you should – crisp is the point
