Makes 2 burgers

  • 10 oz. fresh salmon
  • 1 Tbsp. Kewpie Mayonnaise
  • ½ tsp. salt
  • 2 Tbsp. panko
  • 1 Tbsp. lemon juice
  • Dash of black pepper
  • 2 potato hamburger buns, split
  • 2 Tbsp. KEWPIE Mayonnaise

For the Sauce

  • 2 Tbsp. KEWPIE Mayonnaise
  • ½ tsp. Wasabi paste*

For the Toppings

  • Sliced tomato
  • Lettuce leaves
  • Sliced red onion


  1. Prepare the sauce: In a small bowl, mix KEWPIE Mayonnaise and wasabi until well combined. Set aside.
  2. Make the salmon patties: Cut the salmon into dice. In a food processor, add half of the salmon and mayonnaise and pulse until the mixture becomes pasty. Transfer to a bowl and add the remaining diced salmon, salt, panko, lemon juice, and a dash of black pepper. Gently fold the mixture until well combined. Divide the mixture into 2 equal portions and form into patties. Grill or pan-fry the patties for about 2 minutes on each side, or until cooked through.
  3. Toast the buns: Spread ½ Tbsp. KEWPIE Mayonnaise on the cut sides of each hamburger bun. Place the buns, mayonnaise side down, on the grill or in a pan over medium heat. Toast until lightly crispy and golden.
  4. Assemble the burgers: Place a salmon patty on the bottom half of each toasted bun. Top with a generous dollop of the prepared wasabi mayonnaise sauce, followed by sliced tomato, crisp lettuce leaves, and red onion. Crown with the top half of the toasted bun and serve immediately.
