Spicy California Skirt Burger by Sam the Cooking Guy

This bold burger fuses creamy guacamole, zesty aioli, and a crispy cheese skirt for a spicy, SoCal-inspired flavor explosion you won’t forget.

Makes One

Ingredients

Guacamole:

  • ½ avocado, mashed
  • 1 tablespoon diced white or yellow onion
  • ¼ teaspoon cumin
  • 1 clove minced garlic
  • Juice of ½ lime
  • 1 teaspoon hot sauce

Aioli:

  • 3 tablespoons Kewpie mayo
  • ½ teaspoon smoked paprika
  • ¼ teaspoon cayenne
  • 1 clove minced garlic
  • Juice of ½ lemon

Burger:

  • 1 small jalapeno diced (or ½ large one), sliced
  • 1 Holland pepper, sliced
  • 2 tablespoons sliced white or yellow onion
  • Brioche bun, toasted
  • Oil
  • 2-4 ounce balls of ground beef (preferably a mix of chuck, short rib, and brisket)
  • 1 slice American cheese
  • 1 cup shredded cheddar cheese

Directions

  1. Combine all guacamole ingredients in a small bowl and mix well. Set aside.
  2. Combine all aioli ingredients in a small bowl and mix well. Set aside.
  3. Heat a flattop or pan, add a small amount of oil, and cook the peppers and onions until softened and beginning to brown. Set aside.
  4. Add a little more oil to the pan, then add the ground beef. Flatten and season with salt and pepper.
  5. When the first side is done, flip over and add the slice of American cheese to one of the patties.
  6. Place the shredded cheddar cheese on the flattop in a circle about an inch wider than the patties. Add an ice cube or two beside the cheese, then cover with a pot lid.
  7. Let the cheese skirt cook for about a minute, then remove.
  8. Build the burger: Start with the bottom bun, then add aioli, guacamole, cheese skirt, the patty without cheese, the patty with cheese, veggies, and finally the top bun.
  9. Enjoy your burger! Oh boy!
