Spicy California Skirt Burger by Sam the Cooking Guy
This bold burger fuses creamy guacamole, zesty aioli, and a crispy cheese skirt for a spicy, SoCal-inspired flavor explosion you won’t forget.

Ingredients
Guacamole:
- ½ avocado, mashed
- 1 tablespoon diced white or yellow onion
- ¼ teaspoon cumin
- 1 clove minced garlic
- Juice of ½ lime
- 1 teaspoon hot sauce
Aioli:
- 3 tablespoons Kewpie mayo
- ½ teaspoon smoked paprika
- ¼ teaspoon cayenne
- 1 clove minced garlic
- Juice of ½ lemon
Burger:
- 1 small jalapeno diced (or ½ large one), sliced
- 1 Holland pepper, sliced
- 2 tablespoons sliced white or yellow onion
- Brioche bun, toasted
- Oil
- 2-4 ounce balls of ground beef (preferably a mix of chuck, short rib, and brisket)
- 1 slice American cheese
- 1 cup shredded cheddar cheese
Directions
- Combine all guacamole ingredients in a small bowl and mix well. Set aside.
- Combine all aioli ingredients in a small bowl and mix well. Set aside.
- Heat a flattop or pan, add a small amount of oil, and cook the peppers and onions until softened and beginning to brown. Set aside.
- Add a little more oil to the pan, then add the ground beef. Flatten and season with salt and pepper.
- When the first side is done, flip over and add the slice of American cheese to one of the patties.
- Place the shredded cheddar cheese on the flattop in a circle about an inch wider than the patties. Add an ice cube or two beside the cheese, then cover with a pot lid.
- Let the cheese skirt cook for about a minute, then remove.
- Build the burger: Start with the bottom bun, then add aioli, guacamole, cheese skirt, the patty without cheese, the patty with cheese, veggies, and finally the top bun.
